A beast of a beer. Drink it fresh (like the photo here, taken at the Sierra Nevada Brewery in Chico, CA) and you get a potent punch of intensely bitter hops carried across your palate with a wild string of complex flavors – dried fruit, cognac, leather, warmth, richness. Or, if you prefer a more elegant drinkability to your beer, throw this beer in your cellar (any dark place that stays below 70 degrees F, or at least don’t put it in your attic). Over a few years, that intense bitterness will mellow out, leaving behind a whole new set of flavors and experiences. Pair it with a blue cheese burger, tiramisu, or sticky date pudding.
